You could have some downthrust in there, assuming they got the incidences right on the stab/wing. Hopefully, the ply crutch of the motor mount can be used as a datum reference for longitudinal axis, but I have no clue.

What are the deflections (in degrees) you're using on elev/ailerons?
On my webpage under "hints" are some ideas for making deflection gauges cheaply, and there's also a trimming chart you may want to check out... it's pretty good.
