I've flown my pigi for quite some time now.
First, I hope you meant "3S" Lipos and not "3C." A 3C 1900mAh lipo pack won't get very far with the PJS 1000. If it's indeed a 3S pack then as long and the pack can take 25 or so amps, it's fine. For a 1900mAh pack, you'd need a rating of around 13 or 14C. The plane can take larger packs like the TP 4200 3S2P for longer flight times but more weight.
I run an Electron 6 and HS-55's. That's a little different from your set up but what you gain in servo weight, you're making up for in a lighter RX (maybe not exactly, but it's not a bad set-up). The 81's will work fine, but 55's will too and be lighter still.
Try some different props. An APC 12x3.8SF will make the plane really crawl but give tons of thrust. Not a bad way to practice hovering. Watching a bigger plane like the pigi crawl around at low altitude is kinda fun. An APC 12x6E prop (not the slow flyer prop) will give the plane some real punch and still keep the amps maxxing out around 25 (the PJS 1000's max limit).
There have been countless mods done to the pigi. Look for Grag Covey's thread on the Pigi for tons of ideas (just do a search for it). The CF bracing is a must to get the bird to really go. If you don't brace it, don't be shocked to see the tail twist in some maneuvers. That's EPP foam for ya'.
