Yes the nose will pitch up when flaps are deployed. This is normal. Start at half flap and be prepeared to keep the nose down to keep up the speed. As you carry the speed on your approach, the plane will be getting closer to the ground. As you are about to touch down on the runway, flare and it will set in just nicely. As you become more comfortable with the plane will be be able to judge its sink rate and therefore landings will become easier. Start with half flap first to get the feel of the airplane. This will make good practice when you eventually step up to Warbirds. In terms of props, experiment and see which works best. I know people using 15x8 to a 17x6 APC.
