I'll give you a theory, without any supporting data. Piston temperature is not uniform, there are hot areas and cold areas. Each oil decomposes and forms carbon in some characteristic range of temperatures. If some area of the piston is in that temperature range for a long period of time, the oil will decompose to form carbon in that area.
