perkinsm, The 14x4W is perfect for the Saito 82. The 72 would probably be better off with the 13x4W. I think you would be happier with that prop. It would spool up quicker and pull a little more RPM.
For hovering I think your expos are way off. I use expo, although not nearly that much for all 3D flying except hovering. Depending on the plane for normal 3D flying I use between 30 to 50%. With your expo you are just moving the throws to the end of the sticks. For hovering I've found it much easier to use only about 10% or even less. You want a quick rudder action and not too much movement when you are locked into a hover. This is easiest with little or no expo. Same with the elevator. But you must be very careful or you can get out of control quickly, but it is much easier to do with less expo. Also, generally I leave my ailerons on low rates and use about 30% expo when hovering. You don't need that much aileron. Especially if you want it to torque roll.
