Wings don't fold due to too much throw on the control surfaces, they fold due to poor construction and/or overstressing the design from pulling out of dives to quickly.

You didn't say if you got the plane used (could have been damaged), or an arf...which you didn't quite get enough glue on.

Either way, I suggest going to your local club, and enlisting the help of some experienced builders to get you started. It is much better to have someone show you the ropes at first if youre having troubles, than to try and decipher opinions from us geezers who can't see what you have gotten into.
