I want to put a couple of Thunderpower 2100mAh in parallel to increase my flying time. Is there any chance of overloading the ESC/motor with extra packs in parallel?

Look at it like adding another gas tank to your car. It won't overload the engine (unless its a YUGO and can't handle the extra weight.
