Remember rates or expo do not effect trim so the trim remains sensitive even if the sticks are not. Always try to take maximum mechanical advantage from the servos. I use the furthest out hole on the control surface horn, and then select one on the servo which gives slightly more than the maximum recommended control surface range with full stick motion. This way you are using the entire servo movement and not just using a small amount of servo rotation. Gives better control resolution (if there is such a word!), especially on the trim setting, and helps protect servo gears cause they have better leverage and wear spread over a larger number of gear teeth. Your plane will not seem as twitchy as well.
