You'll have to change the blade pitch angles when using the symetrical blades. The flat bottoms don't need a lot of angle of attack since they have a high camber. The symetrical blades have camber on top and bottom, to maintain level flight (hover) you have to increase the angle of attack or increase the blade pitch.
