Hi Ken,
I'm using the same equipment in my M-F, soon to be transferred to a new Mini-Edge. I had the same problem and reduced the throttle ATV which helped. What are the ESC setting changes you made? I have also reduced the prop from an APC 11-7E to an APC 10-5E.
