With the engine size that you indicated, the Sig Hog Bipe would be the way to go. From what I've seen following a few threads on here it's a pretty easy build. Since you have built the Sig SSE, you are already familier with their type of contruction and shouldn't have any problems. Just do a build thread on here and when/if you run into a problem, there will be plenty of us around to help out.
As far as flying it goes, as long as you can make your SSE do whatever you want and are always in full control (not the plane controlling you) you should pick up on flying the Hog pretty quickly. I'm making an assumption here, but if the Telemaster and the SSE are the only two planes that you have flown, you might get one of the more experienced flyers at your filed to do the maiden. BUT if you are like me, just go for it yourself
Once you get comfortable with the Hog, you might consider the Goldberg Ultimate as your next bipe. If you thought the SSE was fun, wait until you fly an Ultimate
