I'm with Phil. Some people go smaller, but having stripped a servo in flight, I err on the side of caution I.E. stronger servos. In fact it was on an ACE Simple Ultimate and I had to land it by either climbing or diving as the servo skipped over the broken teeth; I then replaced the HS-81 on the elevator with an HS-205.
