Even with counter-balances, which besides being aerodynamically efficient, look very cool, I'd STILL rather err on the side of too much servo rather than too little, just because of physical gear sizes, unless of course you go the metal gear route. I'm not saying load the plane down with a pound of servos, just match the servo to the job...
