Default E-Flite Outrunner 370 question

I am new to the electric segment of the RC hobby, so please be patient.

I now understand the difference between the 1080KV and 1360KV versions of E-Flite 370 Outrunner motor.

Now I cannot seem to locate the 1080KV motor anywhere. But I did buy the 1360KV (model 1205) and a three cell battery from Chief.

Someone on this forum warned me about the two cell limit with the 1360 motor, so I called Chief back. The guy there said they have been selling the 1360 version with three cell batteries for some time and no one is complaining. So I have three questions:

1. Does anyone run the 1360KV with three cells -- and are you happy with the results?
2. What bad things can (will) happen if I try to run the 1360KV on three cells?
3. What is the difference in performance (power / duration / etc..) of these two motors with an appropriate battery?
