i have a H9 Edge 540 with a gator control mechanizm for the elevator(one servo instead of two). Anyways, how much torque should my servos have. Metal gears? Let me know what you guys think. I need them for about 37.00 a peice.

Your price limit is a problem. You are going to want to use something with at least 100-120 oz of torque and the fastest response time.
Do not use regular servos. A buddy of mine just lost his Sig Cap from using standard servos. First flight, stripped the gears in both aileron servos.
Spend the extra few bucks and get the right equipment to do the job right, the first time.
Even if you go back to the original 2 servo set up, you will still want to use a pair of 60 oz servos.

For that size bird, the Hitecs 625MG's should do the job. If not the 645MG's since they are stronger but not as fast. Both will cost around $39.99
I would go with the 625's, maybe 645 on the elevator !
