As far as your engine choice, I know you want unlimited vertical but a 60-70 2 stroke just seems like way too much overkill for a SE. Both of mine (RIP) had a 46 FX and it had excellent vertical performance, it wasn't unlimited but it was pretty close. A better choice (if you have the funds) would be an OS 70 Four Stroke. It's a much better fit than a big 2 stroke, plus my dad has one in his 40 size tiger and with the right prop it will climb and climb and climb...
