The Seagull Arising Star, previously mentioned, is a terrific trainer:

The Sig LT-40 Kadet is widely regarded as one of the best trainers around:

One choice that might be a great fit for you is the Thunder Tiger Tiger Trainer MkII:

This high quality airplane is available as a glueless ARF, meaning that final assembly is very quick and easy. The wing halves would simply need to be bolted together and the tail parts screwed to the fuselage to complete the airframe. This is obviously a very quick building plane.
