How hard is the CP to fly on a 1-10 scale.
Stock CP configuration about 7.5, All the goodies or CP PRO about 9.

Does it break easily?
It is one tough chopper but yes things break sometimes.

What parts are commonoly broken?
When you first start out you will go through wooden blades, rotor head components, main shaft and gear, tail gears and blades, etc... I recommend getting the training gear and carbon fiber main blades, they are damn near indestructible.

How did you guys learn to fly the CP?
I learned the hard way by trial and error with babysteps.

Buy a computer sim, take it slow, and use the training gear.
