Alright,

Speed control- try to go with the castle pheonix 10. I have had alot of success with it and is very easy to program

Motor- I havn't used the one you have, but from what the specs are, it seems like it should work well. 10 oz's of thrust will be cutting it close though for 3D. You may want to go with something a little bigger.

Battery- a 2 cell is perfect, but your going to want more capacity than a 340. Go with something like a 700 or 730 2 cell lipo

Servos- Go with the hs 55's. they may be a little more expensive, but they are far better than the e-flights.

Reciever- I used the gws 4 channel nano in my shockflyers. They dont have the best of range, but these planes are small and you will be keeping them close to you anyways. But they are very lightweight and small, which is a big deal with these small foamies.
