In an effort to help you guys see exactly what I am doing, here are some pics:

First I set the travel limits on the throttle to 100% high and low:


Then I set the failsafe with the throttle stick and trim all the way down in the low position: (Edit: the pos# reads -256, this photo was when I tried to reverse the servo)


Then I set the travel adjustment back to 75% high and low on the throttle:


Then I re-learn the ECU. Once that is complete I wait a few seconds and then shut off the transmitter in the hopes that the failsafe symbol will appear on the GSU, this is what I get:


And this is what the failsafe count reads after switching the radio on and off a couple of times:
