I am actually starting this project. I am going to be using 2 11.1v li-po packs in parallel and place them where the fuel tank would be, Twisted Liquid Rudder and turn fin, Stock hardware (flex shaft, rudder mount, etc...), Aquacraft brushless motor (the one being used in the Supervee 27) and a Barracuda 125 ESC. I am hoping for 40, but we will see when it is all said and done.
