I have the easy star with the Airtronics VG6000 6 channel computer radio, airtonics dual conversion mini receiver and the airtronics 20 amp speed control.
This is going to sound absolutely stupid - but check and make sure your receiver crystal is a real dual-conversion crystal and not a single. I had a Futaba 8-channel that had the wrong crystal installed, and it glitched exactly like you're describing. I fly in a very hi-interference area, so a dual-conversion rx is an absolute must.
