What he is talking about, is Rudder Aleron Mix... When a airplane turns, it has a tendency to hang "Tail down" creating a "slip", The Addition of a little rudder creates a cordinated turn, to where there is no slip or slidding with the rear of the airplane.
Also, many airplanes turn much better with a little rudder added. It helps the tilting of the wings, by slightly increasing the speed of the outer wing, giving more lift to that surface. Thus, you have a plane that turns much nicer.
Too much Rudder makes the airplane slide-turn, looking kinda sloppy. You can especially see this on 2-3 channel planes. (Throttle, elevator, rudder).
