I must appologise today I realised i was reading deg F and thinking degC -- big difference.
A thought on your further explanation and experiment , the steam atmosphere would make it difficult for any excess water to boil out of the mix and may add to the water content of the oil .
My stove top moddifying resulted in a clear oil with no sign of water droplets even after prolonged settling.
