I would think that you would want to keep the exhaust side of the head under 300F.

You might make a few measurements around the head and find the hottest point? I would keep this point under 330F.

I might ad that I'm not a believer in using temperature gauges on a model engine. It is pretty easy to tell if they are hot by using other methods like sight, smell, feel, etc.
