Murdoc....
Good choice on the airplane and engine. You'll love that combo. I fly mine with a Saito 82 and it's excellent.
I don't think you'll like the 3001 servos. Go with HS645 minimum. The control surfaces on this plane are huge. It is prone to flutter if you don't have a strong enough servo. Also, Don't FLY it Fast. Fly it slow. I wouldn't use the CA hinges that come with the plane. Use Radio South CA hinges or go with pinned hinges. Many also strenghten the landing gear. On my latest one I haven't. I just land it smooth. But it is a weak area. Also, you'll want to use carbon fiber pushrods or 4/40 pushrods to stiffen things up a bit.
This is about the most fun airplane I have. It is a riot to fly and is one of only a very VERY few airplanes that will do a rising inverted flat spin. I'd set the CG at 5 1/2" to start. Still very easy to fly and land there yet is better for 3D. This plane hovers about as easy as anything on the market. Great plane.
Thanks
