Well, I looked for such kinda book as well, but could'nt find one, my short experience tells me that you have enough matter/data regarding your questions on the internet available. There are certain R/C flying magazines available in the market, which time to time provide many informations and good topics regarding basic information and beginners start up. I also wanna learn how to make your own model, but so far I have figured it out, first I need to be an apprentice with a senior plane manufacturer guy, look carefully and observe him how he works, and naturally help him out as well, until the plane is completed. How he follows the maps and naturally tools you require, this observation of your own would give a best guidance itself to teach you how to build a plane, and as I get some time, Im gonna do the same.
