I've had a minimag for over a year (bought it from germany) and I love it. Its taken a lot of abuse and still flys like it was new.
I'm not an expert, but here are my comments on your post:
The controller and motor you're talking about are a lot more then the minimag needs. I fly a warp4-5 turn inrunner and a cc thnderbird-18 and have plenty of power (~160w). Your combination will most likely make the plane noseheavy and your flight times will be short. I get 20+ minutes on 3s1p TP-2100's. Also, it will be hard to mount an outrunner; you'll have to make you own engine mount, but a 400-size inrunner fits perfectly.
I usually spin an APC 7x5e prop but I've used an 8x4e. I don't think my plane has enough ground clearance for a 9x6, and I put larger 3" wheels on it so that I can takeoff from moderatly high grass.
You need four servos (2 aileron, rudder, elevator)
