Good question. With most planes speed is a personal thing and the faster your servo the quicker response obviously and better performance so it's really up to what you want to spend on servos. I like to use Hitec digitals on my Fusion as they give me great performance and a great price. I would start with minimum 60 oz per elevator half or 120 for the entire elevator. Go with about 100-120 on the rudder as well and 75-100 on the ailerons. These would be minimum torque values.
