Brazz asked a similar question. There's now an FAQ that covers how to modify FS One to use whatever field of view (FOV) you want with autozoom. This tweak allows setting the field of view from 30 deg to 60 deg and then it autozooms from there. The default in FS One is ~30 deg field of view w/ autozoom.

BTW - As you probably already know, if you press 'A', that will toggle on/off autozoom. When Autozoom is off, then the x/z keys zoom in and out, leaving the FOV fixed when released.
