I have the same temp gun, this is what I get on test bench with Pro Zinger wood 20x8, Bisson side mount muffler and fabed muffler ( both are the same results) 5mm btdc.

140 degrees @ 2000 rpm
180 @ 3500 rpm
280-300 @ 7500 rpm

I only ran wide open for a few seconds, knowing that it would heat up, just wasnt expecting that much. I plan on putting Biela 3 blade 19x10 on after break in.

I went ahead and started on baffling, this is what I got so far.
