The RCM Skyray plan you refered to was meant to be as the basis for the fiberglass kit which is made by MARK FRANKEL. I do not remember you had enough information to make a fuselage from wood.
Alternatively, you can have a look at the Grumman Panther from Nick Ziroli which is quite good and not very difficult to make.

Radio Control Jet International magazine (a Traplet Publication) have also their own set up plans including Mirage, Javelin etc.

RCM magazine have a several plans including F4b Phantom.

Nexus Publication (producers of RCM&E magazine) have some jet plans available including a Bae Hawk. Not many d/f plans here if I remember well.

Of course, in Italy there is Gianni Bertella which Florent described quite well.
