I usually don't have more then a 1/4" of travel in the nose wheel as once you get going very little is needed and yes to much will have you ground looping all over the place. Here's how I set mine up. I have dual rates and like a lot of rudder on high rate and use high when taxing. Once I am lined up I switch to low rate which is usually what the plans call for.
