The fermentation of sugars by yeast results in ethanol, not methanol. You can not make methanol by fermenting sugar. Methanol was originally called wood alcohol because it was originally found in wood tar, a byproduct of making charcoal.

Methanol is extremely poisonous, ethanol just gets you drunk.

There is a common misconception that if you attempt to make your own whiskey and you don't do everything just right, you will end up with methanol. The truth is that poison moonshine was the result of unscrupulous liquor runners selling industrial alcohol as whiskey.
