In normal mode your servo arms will level when your throttle is all the way down, however, there will be some positive pitch to your blades. To adjust how much pitch, you'll need to zero pitch the blades at 50% during Idle Up mode. To do this, disconnect one of the leads to your main motor and disconnect the Deans connector going to your tail. Power on your transmitter, plug in your battery, then flip the Idle Up switch. Move your throttle to 50% and at this point, your blades should have zero pitch. Adjust the grip links by 180° increments to get it to zero pitch.

As for the blades flipping 180°, at the point right before 90°, there will be some resistance. If I give it some force, it'll switch sides too. However, it shouldn't go passed this point normally - it actually won't go near this point during flight at all.
