Tony is right. The Sd-card has to be removed from the receiver and the data has to be read from either the card or from the spot where you download it to. Every time you switch on the receiver, it will start a new log file.
For an analysis like you want to do, it is best to go through all channels one by one. Then in the analysis you will be able to distinguish better the correlation between the single servos and channels and see the specific load of the current and the voltage of the battery etc. Take the time to study the manual on how to use the Nav-View program. It allows you to open several windows on the 2D chart area to give a nice overview of the different functions that you want to monitor.
