The list that you see is a readout in 1 second intervals. so you are getting a moments view. The Exel does rounding and if it is below .05 amps, it will tell you 0. It is unlikely that you will see the 10.85 Amps in the data at the left, because they usually last for a few micro seconds, unless you have a biding of servo's going on, which would mean you have a steady current.
The percentage relates to your choice in the servo setup that also uses % ages. You have the choices of different scaling to have them displayed. The Percentage display (+ or - 200%) of the servos is designed to accommodate all eventually available servo travels. It tells you how much of the travel that you have configured in the servo setup (or left alone) is being used. It can help to determine the differences of servos and manufacturers. They do not share this information, so we provide you the tools to find out what they are actually doing. It takes a little time, but you can do quite a bit with the information that you can gain from methodically checking everything.
In addition you also have transmitters that can send adjustable signals for every channel.
You also have the option to choose how you want the 2D-data displayed. (visible, occurred and possible values) On top of that you can also group them to be similarly scaled. I could go into more detail, but a little playing with it will explain more than I can tell in a few lines.
