I was looking at a couple of LiPo batteries and seen that there is a "2s" and a "2s2p".

What is the difference between the two and how important is it?

The LiPo's will be used in a brushless ground system if that makes a difference.
2S means two cells in series to make up the battery. Sometimes to get more capacity they would put two of these in parallel making 2S2P. Lots of us use the 2S packs for smaller planes, then connecting them in parallel for more capacity for larger planes. If you buy it as a 2S2P you can't easily go back to 2S. I nice paralleling adapter can be made from Deans Ultra plugs.
