Can you tell me where it's balanced on the wing ?
I have a bit of Pizazz experience. Right now I'm going to guess its quite tailheavy. These planes will fly way more tailheavy than you would ever think. A student of mine had one that acted much like yours. I checked his balance and it was so far behind recommended max that it was scary. I was amazed if flew at all, but it did. However, it had some funny habits much like your describing.

As for low and slow flying.... the Pizazz is ok.... but really its a might too heavy for that kind of thing. Ok, a lot too heavy. I know your not rich, but if you really wanna get down in the weeds at walking speed something like a Stickit or Menace or Smith Super Special is more in order. Save the Pizazz for windy days.. LOL That's what I do anyway.
