I'm running the same 550 titan can in my old 27" ABS Sea Master II from RPM (anyone remember these?).
Irrespective of ESC the motor can only turn so many rpms. It pushes my old ABS boat along well enough - I'm using a ProBoat esc with a 3300mAh NiMH pack (6 cels). I may make room for a bigger pack because the esc can handle it, but the motor is what it is.
The EVX you're looking at comes in a waterproof version too - it's pretty much the villian setup if I'm not mistaken.
I really don't think you're going to push this size hull with these motors.
