Generally speaking, if two motors are the same size, more windings/turns means more rpms while lower windings/turns means more torque. In airplane terms, it's the difference between spinning a small prop faster or spinning a bigger prop. In car/truck terms, it is generally the difference between setting up for top speed or setting up for faster acceleration.

This is also true of brushless inrunner/outrunner motors where Kvm is compared instead of turns/windings
