Enlarging has no effect on depth of field. It's related to the lense aperature and focus only, and is determined at the moment the photo is taken, film or digital.

To get expanded depth of field you have to close down on the lens opening, and adjust the exposure time to compensate for the smaller lens opening. That can lead to blurred photos, especially with longer lenses. My guess is the the Dawn Patrol shots where taken with a lens that was at least a 250mm, a reasonably high shutter speed to keep the image of a moving relatively distant moving object nice and sharp. Tough to get large DOF with that combo.

Besides, with the background out of focus one's eye is immediately drawn to the aircraft (no sharp, in-focus background clutter. I thought the pictures were exceptional.
