If you are just hovering you should be able to get 9-10 minute hover times. I lowered my CPP and T-Rex head speeds to fly more scale like, but in my second idle up mode I have high head speeds if I want to do some 3D. Do you have a pitch gauge? And what is the pitch of the blades? When you talked about having to set up the head what all did you do to the helicopter.

Use the paper technique to get a better gear mesh. All you have to do is put a small strip of paper between the pinion and main gear and push the motor as close to the main gear as possible. And that should give you a good gear mesh.

My ESC temps are usually in the 90-110 range depending on outside temp and my type of flying. Try lowering the low voltage cut off and reprogram the ESC first and see where that goes.
