I just point the nose into the wind a touch. It's kind of like a harrier with no ground speed, if that makes any sense. It works in all attitudes. I've gotten my foamy to hover at like 30* from vertical . It's just a matter of pointing the nose in the wind and balancing it.

Until you get it down, fly the plane really far upwind and let it get blown downind. If the wind is right down the runway, you can hover the whole way down the runway.
