The hornet has a take-off profile where as the pilot never grabs the stick until the plane goes over the edge of the boat. Early on the pilots were getting into PIOs (pitch induced oscillations) off the deck. If you watch some in cockpit video both hands are on the glareshield during the cat shot. As far as the rudders pionted in, that goes away as the airplane accelerates down the deck, has to do with all the take-off profile magic.
