You desperately need a knowledgeable (experienced) modeler to go over everything with you. Do not attempt to actually fly it until you get hands on help.
As you can see there are a lot of hurdles to cross or at least double check because of it being Friday afternoon or Monday morning at the factory.
This Evolution engine has a throttle stop screw that should be loosened and adjusted to where you can open the throttle completely as well as close it completely. Then the jam nut on the screw should be tightened back down.
There could be two reasons for the engine not shutting off. One, the the is not closed completely due to adjustment of the radio, throttle linkage, or the throttle stop screw. Two, the throttle body is not inserted completely into the engine and there is an air leak.
