Higher C is better, but you could always compensate for C rating by getting a larger capacity battery. 20C 4000 mah battery outputs the same amps as a 10c 8000. The voltage depends on what the ESC is rated for. 2s lipo will be pretty much guaranteed to work, then you can find out later if it will do up to 3s lipo. BTW, make sure it has a lipo cutoff built in.
