Not just SIG, but numerous designs use the technique of building the ailerons together with the wing then subsequently cutting them apart. It's one way to be sure it is a good fit. As far as the thickness, it is what ever it is, as in scale building. Often sport planes get by with a mismatch as to wing trailing edge thickness and aileron leading edge. It may not look scale, but it works OK.
