I've mounted throttle (and choke and kill switch and onboard glow) servos on firewalls many times with no ill effects. I've always been worried a lot more about heat and vibration than oil. I believe your assumption is correct that as long as you're getting the exhaust clear of the cowl, it's going to stay pretty clean in there.
