Can't help you on the full sized prototype throws but I think we can help you with some model suggestions.

For the stabiliator what I've done with my gliders in the past is to select an amount of throw where the trailing edge up and down linear travel matches what it would be if there was a conventional elevator. I've fine tuned from there but if you follow that rule of thumb you'll be OK for the first flights.
